Lately I’ve been making these easy and super fluffy pancakes. The original recipe is from…hmm?? (I’ll find it later)
Fluffy Greek Yogurt Pancakes
5.3 oz. Greek yogurt 2 Eggs ½ cup flour (I use Bob’s Red Mill 1 to 1 gluten free baking flour) 2 tsp. Baking powder 1¼ tsp. Salt
(I add a little water to make it thinner)
Wisk all ingredients and pour your pancakes.
I’ve been using this yogurt. ⬇️
Then I use the other side for topping!
P.S. I make this for the kids and I. Double the batch if you’re big eaters. 😊

Fireworks Pad thai noodles
We celebrated our 5th anniversary by going to a fancy Thai place. Since was too sick to go last weekend, we ended up going during the winter carnival. Right after got seated the fireworks display started! It was really special.
Sounds like a perfect winter day with a loved one. ❤

In the last 5 years I’ve gotten engaged, married and had babies.

Well, I have to apologize for being such a absent blogger this year. This has been a very exciting year for me! Back in May, I began a courtship with a wonderful man by the name of Donnie Kiele.
We had an amazing summer. Lots of memories made.
So, we got engaged September 20th on a backpacking trip in the Seven Devils.
Getting married January 2015!
